Golden brown and delicious, these oven-baked zucchini fries are served with a zesty yogurt dip spiked with hot sauce, garlic and dill.
|½ cup||bread crumbs|
|½ cup||grated Parmesan cheese|
|⅓ cup||all-purpose flour|
|2||eggs, lightly beaten|
|2||large zucchini, cut into 3- x 1/2-inch sticks|
|½ cup||Greek yogurt|
|½ cup||sour cream|
|2 Tbsp||The Original Louisiana Brand Hot Sauce|
|½ tsp||dried dill|
|½ tsp||garlic powder|
Preheat oven to 425°F.
In shallow dish, combine bread crumbs and Parmesan. Place flour in separate dish and eggs in another dish. One at a time, dredge each zucchini stick in flour, dip in beaten eggs, then coat in bread crumb mixture. Arrange on parchment paper–lined baking sheet, about 2 inches apart.
Spray zucchini fries with cooking spray; bake for about 20 minutes or until golden brown.
Meanwhile, whisk together yogurt, sour cream, hot sauce, dill and garlic powder. Serve with zucchini fries for dipping.
Substitute 2 tbsp finely chopped fresh dill for dried dill and 1 minced garlic clove for garlic powder if preferred. For a crunchier coating, substitute panko for regular bread crumbs.Recipe tags: Louisiana Brand Hot Sauce, easy difficulty, side, roast
