4 cup | vegetable oil |
1 lb | cod fillets, cut into 1" cubes |
1 Tbsp | freshly squeezed lemon juice |
2 tsp | cayenne pepper, divided |
2 tsp | garlic powder, divided |
1 pkg | Shore Lunch® Cornmeal Breading Mix |
1 | large egg, beaten |
1 Tbsp | water |
½ cup | ketchup |
1 tsp | garlic powder |
¼ tsp | cayenne pepper |
¼ tsp | chili powder |
¼ tsp | black pepper |
½ tsp | Worcestershire sauce |
1 Tbsp | The Original Louisiana Brand Hot Sauce |
1 Tbsp | freshly squeezed lemon juice |
1 Tbsp | prepared horseradish |
Heat the oil in a large stockpot to 350 degrees.
Add the cod to a medium sized mixing bowl. Add the lemon juice, 1 teaspoon cayenne pepper, and 1 teaspoon of garlic powder and toss to coat.
Combine the breading, remaining cayenne pepper, and remaining garlic powder in a shallow dish.
Whisk the egg and the water in a shallow dish.
Dip each piece of the cod in the egg then dredge in the breading. Place the breaded cod on a baking sheet until ready to fry.
Carefully add the cod, in batches, to the oil and fry for 2-3 minutes.
Using a slotted metal spoon remove the cod from the oil to a platter lined with paper towels.
Whisk the ketchup, garlic powder, cayenne pepper, chili powder, black pepper, Worcestershire sauce, lemon juice, Hot Sauce, and horseradish in a small mixing bowl. Serve immediately with the fried cod.
