|1 cup||diced white onion|
|¼ cup||freshly chopped cilantro|
|1 can||petite diced tomatoes (14.5-ounce)|
|1 Tbsp||Red Rooster Hot Sauce|
|1 recipe||Slow Cooker Refried Beans|
|8||eggs cooked over medium|
|8||corn tortillas, heated|
|Fresh avocado slices, optional|
Heat the oil in a small saucepan over medium high heat. Add the onions and cook for 2 - 3 minutes. Add the cilantro, diced tomatoes, and hot sauce to the pan and simmer for 10 minutes. Remove from the heat.
Spread the bottom of each tortilla with ¼-cup of the Slow Cooker Refried Beans., top with a cooked egg, and spoon ¼-cup of the tomato sauce over the egg whites. Add slices of avocado over eggs and tomato sauce if desired. Serve Immediately.
