| 1 recipe | Slow Cooker Refried Beans | 
| 8 | eggs cooked over medium | 
| 8 | corn tortillas, heated | 
| Fresh avocado slices, optional | 
Heat the oil in a small saucepan over medium high heat. Add the onions and cook for 2 - 3 minutes. Add the cilantro, diced tomatoes, and hot sauce to the pan and simmer for 10 minutes. Remove from the heat.
Spread the bottom of each tortilla with ¼-cup of the Slow Cooker Refried Beans., top with a cooked egg, and spoon ¼-cup of the tomato sauce over the egg whites. Add slices of avocado over eggs and tomato sauce if desired. Serve Immediately.
