Preheat oven to 400°F. Mix together ground beef, bread crumbs, egg, onion, 2 tbsp ketchup, 2 tbsp water, thyme, 2 tbsp hot sauce, Cajun seasoning, oil and garlic. Divide into 6 portions.
Shape each portion into 9- x 6- x 1 1/2-inch rectangular loaf. Arrange on large parchment paper–lined baking sheet, about 4 inches apart.
Bake for 10 minutes. Stir together remaining ketchup and hot sauce; brush over loaves. Bake for 10 to 12 minutes or until tops are golden and caramelized, and internal temperature on instant-read thermometer reaches 160°F.
For a tasty meatloaf dinner, serve with mashed potatoes and corn. Alternatively, bake in mini loaf pans or muffin cups, adjusting cooking time as needed.
