|8 slice||bacon, cut into ¼" pieces|
|2 cup||diced white onion|
|¼ cup||minced garlic|
|16 cup||collard greens, cleaned and roughly chopped|
|¼ cup||Louisiana Gold Green Pepper Sauce with Tabasco Peppers|
|1 can||Black eyed peas (15.5oz), drained and rinsed|
|salt, to taste|
|pepper, to taste|
Add the bacon to a large pot over medium high heat. Cook for 3- 4 minutes. Add the onion to the pot and cook for 3 - 4 minutes more. Carefully drain the grease. Add the garlic to the pot and cook for 30 seconds more.
Add the collard greens to the pot, mix well, and cook covered for 15 minutes. Remove the pot from the heat. Add the Pepper Sauce and black eyed peas to the pot, season with salt and pepper.
