3 Tbsp | vegetable oil |
1 cup | diced white onion |
1 Tbsp | minced garlic |
1 | bay leaf, crumbled |
2 can | dark red kidney beans (15.5-ounce) |
½ cup | hot water |
2 Tbsp | Red Rooster Hot Sauce |
1 Tbsp | salt free Cajun seasoning |
1 tsp | cayenne pepper |
8 oz | andouille sausage, sliced into ΒΌ" pieces |
Add the oil to a small stockpot over medium high heat. Add the onions and cook for 2 - 3 minutes. Add the garlic and bay leaf and cook for 30 seconds more. Add the beans, hot water, Hot Sauce, Cajun seasoning, cayenne pepper, and sausage to the pot and bring to a simmer. Simmer for 10 minutes.
Remove the pot from the heat and serve immediately over cooked rice.
