Preheat oven to 425 F. On a foil- or parchment-lined baking sheet, add fries in an even layer. Bake, tossing halfway through, until they are golden brown and crisp, between 25-30 minutes. Meanwhile, combine shredded chicken and The Original “Louisiana” Brand Hot Sauce™ in a medium bowl.
Remove fries from oven. Sprinkle half of the cheese on top of the fries, then divide chicken mixture over the cheese in an even layer. Top with remaining cheese and bake for 5 minutes, or until cheese is melted.
Sprinkle green onion over the top. Drizzle Litehouse Chunky Blue Cheese Dressing & Dip over the loaded fries and serve.
