Preheat oven to 375 F. Lightly spray a standard 12-cup muffin pan with cooking spray. Fill each cup with 5 tater tots. Bake for 10 minutes, remove from oven and let cool slightly. Using a small wooden spoon or rubber spatula, press and flatten the tater tots against the sides and bottom of each muffin cup to create a nest. Sprinkle each nest with cheddar cheese. Return to oven and bake until cheese is melted and nests are golden brown and crisp, about 12 minutes. Let cool 10 minutes before transferring to a serving platter.
Meanwhile, heat Litehouse Homestyle Ranch Dressing & Dip, The Original “Louisiana” Brand Hot Sauce™ and cream cheese in a saucepan over medium heat. Cook, stirring often, until sauce is smooth, about 5 minutes. Stir in chicken and green onion and toss to coat and warm through.
Divide creamy Buffalo chicken mixture between prepared tater tot nests. Top with sliced green onions, if desired, and sprinkle with freshly ground black pepper.
